      1-甲基环丙烯(1-MCP)作为一种新型的乙烯受体抑制剂, 已成为当前果蔬采后保鲜领域研究热点之一。本文对近年来1-MCP处理技术对果蔬质地结构的作用效果及其机制相关研究进行综述, 分析了存在的问题并对该研究发展趋势进行了展望, 以期为1-MCP采后处理技术的广泛应用提供参考依据。

      1-methyl propylene (1-MCP) is a new type of ethylene receptor inhibitor, which has become one of the hot research topics in the research field of fruits and vegetables postharvest. In this paper, the effect and related mechanism of 1-MCP treatment on fruit and vegetable texture in recent years were reviewed. It also discussed the existing problems and development trend, to provide the reference basis for expanding application space of 1-MCP technology.
