      目的 研究模拟物流条件下养殖大黄鱼品质及新鲜程度的变化。方法 设定4种物流模型, 分别测定模拟物流条件下养殖大黄鱼pH、挥发性盐基氮(total volatile basic nitrogen, TVB-N)、菌落总数、K值、三甲胺(trimethylamine oxide, TMA)、硫代巴比妥酸(thiobarbituric acid, TBA)的变化。结果 4种模拟物流条件中温度变化大及空气包装条件下的养殖大黄鱼品质变化较大, 温度变化大的真空包装条件下的养殖大黄鱼品质变化居中, 温度变化小真空包装条件下的养殖大黄鱼品质变化小。温度变化对养殖大黄鱼的品质影响较大。对比终点时间的2个模型, 模型Ⅱ-真空的TMA(2.42 mg/100 g)小于模型Ⅰ-真空(3.19 mg/100 g)。模型Ⅱ-真空中TVB-N(28.47 mg/100 g)远小于模型Ⅰ-真空(52.80 mg/100 g)。结论 模型Ⅱ-真空的物流条件可以更好地保持养殖大黄鱼的品质。
英文摘要:
      Objective To investigate the changes of quality and fresh degree of cultured large yellow croaker in simulated logistics condition. Methods The pH, TVB-N, the total number of colonies, K value, TMA, and TBA of cultured large yellow croaker in simulated logistics condition were determined in 4 kinds of logistics models. Results The quality of cultured large yellow croaker changed greatly with large temperature variation and air packaging, followed by large temperature variation of vacuum packaging of cultured large yellow croaker, small variation in the temperature of the vacuum packaging of cultured large yellow croaker. Temperature variation had great influence on the quality of cultured large yellow croaker. Comparing the two models for endpoint time, TMA value of model II-vacuum (2.42 mg/100 g) was less than model I-vacuum (3.19 mg/100 g). TVB-N value of model II in vacuum (28.47 mg/100 g) was more smaller than model I-vacuum (52.80 mg/100 g). Conclusion ModelⅡ-vacuum logistics conditions can be better maintain the quality of cultured yellow croaker.
