      目的 监测吉林省市售食品中蜡样芽胞杆菌的污染情况, 为预防食源性疾病及保障食品安全工作提供科学研究数据。方法 根据GB/T 4789.14-2003《食品安全国家标准 食品微生物学检验 蜡样芽孢杆菌检验》中的方法, 对2011~2015年吉林省不同地区各流通环节的1693份样品进行蜡样芽孢杆菌检测。结果 1693份样品中, 共检出蜡样芽胞杆菌557株, 总检出率为32.90%。其中, 2015年的阳性检出率最高。9个地区中, 白山市检出率最高, 达到64.48%。在各食品类别中, 乳与乳制品的蜡样芽孢杆菌污染最为严重, 检出率为39.45%; 其次为餐饮食品和婴幼儿配方食品, 其检出率分别为31.49%和31.09%。餐饮服务环节与流通环节、散装与预包装等因素对检出率无显著性影响。结论 2011~2015年吉林省食品中蜡样芽胞杆菌污染严重, 相关部门应加强重视, 加大监管力度, 预防食源性疾病的发生。

      Objective To monitor the contamination of Bacillus cereus in food in Jilin province, in order to provide scientific data for the prevention of foodborne disease and ensuring food safe. Methods The Bacillus cereus in 1693 food samples from different regions and different intermediate links in Jilin province during 2011~2015 were detected according to GB/T 4789.14-2003 Microbiological examination of food hygiene- Examination of Bacillus cereus. Results Five hundred and fifty-seven strains of pathogens were isolated from 1693 samples and the total detection rate was 32.90%. Positive detection rate was the highest in 2015. In 9 regions, the highest detection rate was 64.84% in Baishan city. Milk and dairy products were the most contaminated food, the detection rate was 39.45%, followed by catering food and infant formula, the detection rate was 31.49% and 31.09%, respectively. The positive detection rate of foods which were collected in the restaurants or circulation sectors, bulk or prepackaged had no significant difference. Conclusion The contamination of Bacillus cereus in Jilin province during 2011~2015 was serious. The relevant departments should pay more attention to strengthen supervision and prevent the occurrence of foodborne diseases.
