      目的 探讨低O2高CO2对白玉枇杷品质及活性氧代谢的影响。方法 以空气为对照, 在常温(27±2) ℃和相对湿度(70±5)%的贮藏条件下, 研究(4±0.5)% O2, (16±0.5)% CO2对枇杷呼吸速率、外观色泽、质地、营养成分、活性氧与相关酶活性的影响。结果 与空气对照相比, 低O2高CO2的气体组分处理贮藏至第6 d出现显著差异(P<0.05)。贮藏结束时, 低O2高CO2处理的枇杷果实呼吸速率、a*值分别降低28.8%、13.6%。硬度、可溶性固形物、可溶性糖、可滴定酸、VC分别高出11.6%、19.2%、25.5%、65.7%、16.2%。过氧化物酶(peroxidase, POD)、脂氧合酶(lipoxygenase, LOX)活性、过氧化氢(H2O2)、丙二醛(malondialdehyde, MDA)含量分别降低16.0%、35.5%、21.4%、23.1%。过氧化氢酶(catalase, CAT)、抗坏血酸过氧化物酶(ascorbate peroxidase, APX)活性分别高出47.9%、25.3%。结论 常温下, 低O2高CO2气体处理可以降低枇杷的呼吸代谢速率, 抑制a*值的上升, 主要延缓可溶性糖与可滴定酸的降解, 减缓POD、LOX活性及MDA含量的上升, 保持较高的CAT、APX活性和较低的H2O2含量。

      Objective To discuss the effects of low O2 high CO2 gas component on the quality and active oxygen metabolism of Baiyu loquat. Methods The air condition was used as control, at the storage conditions of room temperature (27±2) ℃ and relative humidity (70±5)%, the effect of (4±0.5)% O2 and (16±0.5)% CO2 gas component on the respiratory rate, color, texture, nutrition, active oxygen and the relative enzyme activities of loquat were studied. Results Compared with air control, there was a significant difference in the gas composition treatment of low O2 high CO2 (P<0.05) in storage to 6 d (P<0.05). At the end of storage, the respiration rate and a* value of loquat fruit with low O2 high CO2 were lower by 28.8% and 13.6%, respectively. The hardness, the content of soluble solids, soluble sugar, titratable acid and VC were higher by 11.6%, 19.2%, 25.5%, 65.7% and 16.2%, respectively. The activities of peroxidase (POD), lipoxygenase (LOX), the content of H2O2 and malondialdehyde (MDA) were lower by 16%, 35.5%, 21.4% and 23.1%, respectively. The activities of catalase (CAT) and ascorbate peroxidase (APX) were higher by 47.9% and 25.3%, respectively. Conclusion The treatment of lower O2 higher CO2 gas component at room temperature can decrease the respiration rate of loqua, restrain the rise of a* value, main delay the degradation of soluble sugar and titratable acid and slow the rise of POD, LOX activity and MDA content, maintaining high CAT and APX activity and low H2O2 content.
