      目的 研究胃肠液对纳豆激酶纤溶活性的影响。方法 模拟人体胃液、肠液中的生理过程, 采用纤维蛋白平板法, 对粗酶液和含豆固体粉碎样品2种形态的纳豆激酶进行纤溶活性研究。结果 粗酶液和含豆固体粉碎样品在人工胃液处理5 h左右时, 活性分别下降到对照组的28%和35%, 说明2种状态的酶在酸性的胃液中都不稳定, 大部分活性丧失; 粗酶液和含豆固体粉碎样品在人工胃液处理4 h后, 再用人工肠液处理 5 h, 活性分别下降到对照组的89%和91%; 说明在人工肠液中2种状态的酶都较稳定, 都保持较高的酶活性。结论 为避免胃酸的破坏作用, 建议将纳豆激酶制成肠溶性的产品服用。

      Objective To study the effect of gastrointestinal fluid on the fibrinolytic activity of nattokinase. Methods The physiological processes in the human gastric and intestinal juice were simulated. The fibrinolytic activity of nattokinase in crude enzyme solution and solid crushing sample containing bean were studied by fibrinoid plate method. Results When the crude enzyme solution and solid crushing sample containing bean were treated with the artificial gastric juice for about 5 hours, the activity of nattokinase decreased to 28% and 35% of the control group respectively, indicating that the enzymes in the 2 kinds of state were unstable in the acidic gastric juice and most of the activity was lost. When the crude enzyme solution and solid crushing sample containing bean were treated with the artificial gastric juice for about 4 hours, and then the artificial intestinal solution was used for 5 hours, the activity decreased to 89% and 91% of the control group respectively, and the results showed that the enzymes in the two states were stable and had high enzyme activity. Conclusion It recommends to use nattokinase as an enteric soluble product in order to avoid the damage of gastric acid.
