      针对现有学校餐厅食品安全管理信息化系统在食品安全风险预防能力等方面的不足, 设计了一套基于物联网、大数据等现代信息技术的新一代学校餐厅食品安全管理信息系统。本文分析了学校餐厅食品安全风险的常见诱因, 结合现有信息化系统在食品安全风险预防能力等方面的不足, 对新一代食品安全管理信息化系统的功能需求进行了分析; 设计了系统的总体架构和逻辑结构; 阐述了常见群体性食品安全风险的报警、检测食品加工过程不规范行为的视频分析算法、大批量关键业务数据的自动快速采集等关键技术, 给出了解决上述关键技术的技术路线。展示了系统一期建设的部分功能。系统一期工程的建设成果目前已投入实际使用, 取得了较好的应用效果。
英文摘要:
      Aiming at the shortcomings of food safety management information system in food safety risk prevention ability of the school restaurant, a new generation of school restaurant food safety management information system based on modern information technology such as internet of things and big data was designed. This paper analyzed the common incentives of food safety risks in school restaurants and the functional requirements of the new food safety management information system in combination with the shortcomings of existing information systems in food safety risk prevention, designed the overall architecture and logical structure of the system, described the key technologies of alarms for common group food safety risks, video analysis algorithms for detecting irregular behavior of food processing, and automatic rapid collection of large-scale key business data. This article also gave the technical route to solve the above key technologies, and showed some of the functions of the first phase of the system. The construction results of the first phase of the system have been put into practical use and have achieved good application results.
